Scallop Ceviche with Pistachios Le Soleil du Sud style
Portion for 2-3 people
Ingredients:
- ¼ red onion
- Handful of pistachios
- Handful of walnuts
- 1 tablespoon of fresh coriander
- ½ lime juice
- Salt pepper
- 1 bag of Peruvian Scallops
- 2 small red Jalapeño
Steps :
- Dip the sliced red onion in warm water for at least 5 minutes
- Chop walnuts and pistachios
- Cut the Jalapeños into small pieces and exclude the seeds
- Chop the fresh coriander
- Rinse the scallops in cold water and dry them with a cloth
- In a plate or bowl, combine all the ingredients - Scallops, red onion, walnuts, pistachios, Jalapeños and coriander.
- Finally, squeeze the lime (not too much)
- Add salt and pepper to taste
