Orange Scallop Ceviche

Ingredients:

100 grams of premium quality scallops from Peru
1/2 tablespoon diced shallots (diced)
1 tablespoon diced red pepper (diced)
2 tablespoons diced orange supreme
1 lime juice
The juice of 2 freshly squeezed orange
1/4 tablespoon olive oil
Salt to taste
A few fresh cilantro leaves

Steps

Combine all the ingredients except the cilantro leaves
Let stand 15 minutes before serving
Adjust seasoning
Decorate with cilantro and serve
